Ingredients for 4 people:
- 1 onion
- organic extra virgin olive oil "Vecchio Maneggio"
- 1 radicchio
- 320 g vialone nano rice "Principato di Lucedio"
- Plenty of grated Parmigiano Reggiano 36 months
- 100 g diced montasio DOP
- vegetable broth
Dice the onion and cut the radicchio into small pieces and fry in olive oil. Add the rice and fry briefly. Deglaze with white wine.
Add the vegetable stock little by little until the rice is cooked. Finally, stir in the diced montasio and serve with plenty of grated Parmesan cheese.
