Manufacturer: Borgo Casa al Vento
"La scelta del Biologico" (Choosing Organic)
For centuries, agriculture was exclusively organic. Then, the mirage of modern agriculture allowed for the absurd abuse of pesticides and other treatments.
The result was parched earth, a loss of flavor, and a risk to our health.
With courage and farsightedness, but most of all with respect to the earth, we have decided to take our vines, our olives and all of our property back to a natural and organic state.
In this way our products have acquired an identity, distinguished by strong character and high quality.
As our products are organically grown, this is why they have a particularly good taste.
Analysis:
Production area: Casa al Vento, Gaiole in Chianti (SI)
Height: 456 above sea level
Olive variety: Frantoiano, Leccino and Muraiolo
Harvesting: by hand, the olives are sent within 24 hours of harvesting to the press
Acidity: 0%
Tasting Notes:
Golden yellow color. The olive oil smells slightly of freshly cut herbs (basil, mint and sage). The taste of the oil is very mild and slightly sweet with a slightly spicy finish.
Recommendation: To bruschetta and stews such as Ribollita.
