A recipe from our French customer Perrine:
- Red rice "Principato di Lucedio"
- Carnaroli rice
- Grilled eggplant
- Ham
- 1 onion
- tomatoes
- Green olives
- 1 tbsp creme fraiche
"My Italian partner has sent to me a great rice. It tastes fantastic and I invite you all to try it
preparation:
Cook the rice for 45 minutes in salted water.
Chop the onion finely and fry onions in a little olive oil. Deglaze with white wine. Add the chopped ham. Cover with broth and simmer 30 minutes.
Add the rice and season with a little creme fraiche.
At the same time grill the eggplant, cut into strips and add with the crushed tomatoes and the olives to the rice. Cook for another 5 minutes.
Serve with plenty of grated Parmesan.
