Ingredients for 4 people:
- 300 g risotto vialone nano "Principato di Lucedio"
- 100 g pumpkin
- 2 sausages "Al Berlinghetto"
- 1 liter of broth
- 1/2 onion
- 1/2 glass of white wine
- salt and pepper
- 30 g butter
- 20 chopped almonds
- Parmigiano Reggiano
Sauté the finely chopped onion in a little butter until soft. Add the diced pumpkin, the chopped sausage and the rice and fry for a minute. Deglaze with the white wine.
Stir the rice continually and add the broth gradually whenever the broth has been absorbed by the rice. After 15 minutes, add the chopped almonds and cook for a further minute. Turn off the stove and add plenty of Parmesan. Let rice sit for one minute. Then serve.
