Caravaggio is a wine from Emilia that is produced by manual harvesting in separate boxes for the individual varieties. A part of the Croatina grapes, about 20%, is harvested late in order to ensure the bunches a higher sugar and aromatic concentration, reached naturally on the plants with the temperatures of our late autumn.
Manual harvesting is followed by soft crushing and maceration in contact with the skins for a short time (5-6 days) at a controlled temperature (28-30°C) with three pumping over per day, conducted with the aim of respecting the characteristics of the fruit of each variety. The individual Emilian wines are then aged in French oak barriques for 12 months, using new woods for the portion of Emilian red wine obtained from overripe grapes.
Once the refinement is over, the wines are finally blended in steel tanks. This is followed by bottling conducted with the aim of preserving the fragrant fruit characteristics of the wine.
Deep ruby red color, lively and brilliant. The nose appreciates crunchy red fruits, a lively morello cherry, together with hints of wood rightly toasted, with cherries sottospirito as the final note. When tasted, the wine is agile, fresh, with good acidic spine, rightly tannic, with a fair residual sugar that ensures a pleasant drink and a length of taste relief.
