The name “Caliz” derives from the Latin terms Calix (chalice) and Calx (limestone). Chardonnay Caliz is grown exclusively on light gravelly soils with a high percentage of limestone. The yield was reduced to 65 hl per hectare of vineyard. delicate bouquet with notes of ripe pineapple, baby banana and cedar peel. The characteristic richness of Mediterranean fruit is integrated with an energetic acid structure deriving from selected batches of Chardonnay from high-altitude vineyards. Aging for 6 months on fine lees in large wooden barrels, the wine acquires complexity and consistency. The action of the warm southern winds and the low night temperatures close to the limestone rocks enrich the wine with elegant aromas.
