Intense, complex: ripe fruit, cherry in spirit, plum, spices, tobacco, cocoa, leather, balsamic hints.

Taste

Full-bodied, warm, velvety, robust, balanced with soft tannins. Long finish of dried fruit and spices.

Large Amarone or structured red wine glass, to promote oxygenation and aromas.

Pairings

Braised/grilled red meats, game, aged cheeses. Excellent as a meditation wine.

Refinement

Long aging in oak barrels (min. 36 months), followed by bottle aging for complexity.

Vinification

Grape drying 3-4 months, soft pressing, slow fermentation at controlled temperature.
