Ingredients for 4 people:
- 250 g Black Venus rice "Principato di Lucedio"
- 5 roasted and pickled artichokes "Arconatura"
- 300 g pumpkin
- Extra virgin olive oil casaliva "Comincioli"
- Parmigiano Reggiano aged 36 months
- salt from Trapani
Cook the black Venus rice in plenty of salted water for 45 minutes.
Cut the pumpkin into 1 cm pieces and cook in a grill pan. Season with salt and pepper.
Cut the artichokes into pieces and put them together with the pumpkin in a saucepan.
Drain the rice and add it to the vegetables in the pan. Season with 3 tablespoons olive oil and plenty of grated Parmesan.
