A recipe of our colleague Jessica!
Ingredients for 4 people:
- 350 g vialone nano rice "Principato di Lucedio"
- 1 onion
- 1 stalk of celery
- 6-7 basil leaves
- A little butter
- 1 glass of dry white wine
- 1 Ribera Orange
- 1.5 liters of broth "Bio-Well"
- 40 g Parmigiano Reggiano takes 36 months
- Chopped parsley
- Chili powder
Finely chop the onion, celery and basil and fry them in a saucepan. Add the rice and sauté for 1 minute. Deglaze with the white wine. Add the orange juice and chili powder.
Then prepare the risotto as usual adding a ladle of broth, whenever the broth was absorbed by the rice.
In the end, add the parsley and serve with plenty of Parmesan. Garnish the rice with some orange slices and serve.
