Delgado Zuleta Monteagudo Pedro Ximénez is a fortified Spanish wine from Jerez. Made entirely from sun-dried Pedro Ximénez grapes, it displays a dark mahogany colour and intense aromas of dried fruits and honey. On the palate, it is sweet, velvety, and complex, with a long finish. It is perfect as a dessert wine or paired with blue cheeses, served at 12-14°C. Aged in a traditional Solera system.

Colour
Intense dark mahogany, almost ebony, with a dense, viscous appearance.
Bouquet
Profound aromas of raisins, figs, dates, honey, coffee, chocolate, liquorice, and candied citrus peel.
Taste
Luxuriously sweet, velvety and full-bodied, with concentrated flavours of dried fruits, caramel, chocolate, and a very long, complex finish.

Small tulip glass or traditional Sherry copita, to appreciate its aromas and richness.
Pairings
Excellent with desserts, blue cheeses, dark chocolate, ice cream, fruit tarts. Also superb on its own as a digestif.
Refinement
Aged oxidatively for many years in a traditional Solera and Criadera system in American oak barrels.
Vinification
Grapes are sun-dried (pasificación) to concentrate sugars, then pressed. Fermentation is stopped by adding wine alcohol. Aged in Solera.
