Raclette is a Swiss cheese. Maybe you meant fondue? For fondue you need a cheese that melts easily. The best is Fontina that melts nicely and easily. You can also take Bitto and soak it in milk. Then give a little Truffle over it! *User O.I.P. ( www.onlyitalianproducts.it )*
