The cheese never has a deadline is a living thing (lactic ferments) evolving, many cheeses last even months if properly preserved.
If you tell me what kind of cheese, I'll give you ways and times of conservation .
you're talking about the mature Auricchio , you have to cover it with transparent film and last for a couple of months if it is moldy, it does not mean it went wrong, but you just have to remove the mold, under it is a healthy cheese
