Winemaking and ageing: we talk about late harvesting since the grapes are the last to be harvested: Cabernet France Cabernet
Sauvignon are harvested manually by epigiate per day, while for Merlot the grapes are harvested by hand in trays to rest for 20/30 days in the fruit cellar. Vinification in cement tanks at natural temperature and yeast in digeno for approximately 40 days.
Aging in new barriques for at least 30 months.
