Santi - Amarone della Valpolicella Classico Proemio 1995
The Santi Amarone della Valpolicella Classico Proemio 1995 is a sublime expression of Venetian enology. This DOCG, made from Corvina, Rondinella, and Molinara, presents an intense garnet color with orange hues. The aroma is a triumph of ripe fruit, spices, tobacco, and leather. On the palate, it is powerful, velvety, and harmonious, with 15% Vol. Long aged in oak and bottle, it pairs perfectly with red meats and aged cheeses. Serve at 18-20°C in a large glass.

Intense garnet red with orange and brick-red reflections.
Bouquet
Ethereal, complex bouquet of ripe fruit, cherry in spirits, sweet spices, tobacco, leather, and cocoa. Evolved tertiary notes.
Taste
Full-bodied, warm, and velvety, with soft and elegant tannins. Persistent, with an aftertaste of dried fruit, liquorice, and spices. Great balance.

Large "Gran Balon" or Burgundy glass, to promote oxygenation.
Pairings
Ideal with game, important roasts, braised red meats, and aged cheeses. Excellent also as a meditation wine.
Refinement
Long aging in Slavonian oak barrels and small French oak barrels, followed by a period in the bottle.
Vinification
Selected grapes naturally dried (appassimento) for 3-4 months. Slow fermentation in steel tanks, with prolonged maceration on the skins.
