Soave is believed to owe its name to Dante Alighieri, a great friend of Lord of Verona, Cangrande della Scala. It is one of the most famous Italian whites in the world. This wine is obtained from selected vineyards in the hills of Monteforte D’Alpone in the heart of the classic zone.
Soave, which possibly owes its name to Dante Alighieri, close friend of the lord of Verona, Cangrande della Scala, is one of the world’s best known Italian white wines. Monteforte is a Soave Classico with very specific qualities associated with the strict selection of the grapes and the long time the wine spends on its own lees thanks to which the bouquet and the flavour acquire exceptional complexity and richness.
The grapes: 90% Garganega, 10% Trebbiano di
Soave.
The vineyard: selected parcels in the hills of Monteforte d’Alpone (300 metres altitude) in the heart of the Classico zone, facing south-west. The soil is of volcanic origin and basaltbased, rich in calcium, potassium and magnesium, on steep slopes divided into little terraces with drystone walls. The vineyards are trained by the typical pergoletta veronese system (3000 vines per hectare), with a yield of only 100 quintals of grapes per hectare.
The vinification: the ripe grapes are picked at the beginning of October and undergo a gentle pressing with a long cold maceration on the skins, in the press. After natural clarification the must ferments at a controlled temperature (14-17°C) with selected yeasts in steel vats. There is no malolactic fermentation afterwards.
The cold contact with its own lees until the spring and the addition of a small percentage of wine made from the same grapes having been dried increases the aromatic complexity and the fullness of this great wine.
The wine: strong straw colour; intense bouquet, of exceptional finesse, with a fresh fragrance of elderflowers and hints of exotic fruits and acacia honey. The flavour is savoury, very attractive and balanced, full-bodied and with an excellent length.
Analytical details: 12.7% alcohol; 5.30g/l total acidity; 3.27 pH; 5.1 g/l residual sugar; 20.5g/l dry extract.
Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.
Food matches: hors d’oeuvres, first courses, eggs, fish.
Serving temperature: 12-14°C.
