VINIFICATION
The carefully selected grapes are harvested in mid-September and left to dry in the drying room for approximately three months. Here, the bunches lose approximately 25-30% of their weight, resulting in a concentration of the substances present in the berries. After pressing in mid-January, alcoholic fermentation begins in steel tanks for approximately 25-30 days at a controlled temperature. Continuous punching down of the cap is performed to facilitate the extraction of color and tannins. Finally, the wine is transferred to French oak barrels, where malolactic fermentation begins, imparting smoothness to the wine.
TASTING NOTES
Intense red color. The nose is fruity with notes of blackberry and dark chocolate. On the palate, this Amarone is elegant and refined with silky tannins.
