TERRAROSSA
Chianti classico DOCG
Grapes: 80% sangiovese, 20% complementary varieties.
Vineyard: yield per hectare limited to 75 quintals (density of 3.350 vines, with a yield of about 2 kg of grapes per plant), optimum aspect (400 metres above sea level) on the hills of Castellina and of Radda in the Sienese part of the Classico zone: well exposed terrain of a very varied nature (alberese, marl, clay and conglomerates).
Vinification: the grapes, picked by hand after the first week of October, are vinified by the red wine method, with about 15 days maceration and with frequent remontages; the fermentation takes place at a controlled temperature; the wine ages for a year in French oak casks, and matures for the requisite time in glass before it is sold.
Wine: of exceptional structure and notable polyphenolic composition, ruby colour with faint garnet tints, typical bouquet evocative of raspberries and irises, full and firm flavour, elegant and balanced; by origin and because of its complexity, it is sure to improve and develop for a long time in bottle.
Optimum keeping: 8-9 years in bottles stored horizontally in cool, dark conditions.
Food matches: roast meats, game and cheeses.
Serving temperature: 18-20°C.
