TERRAROSSA
Chianti classico DOCG Riserva
Grapes: 80% sangiovese, 20% complementary varieties.
Vineyard: selected parcels on the splendid hills of Castellina, in the Sienese part of the classic zone, at 300-
400 metres altitude; the vines are trained by the spalliera system (Guyot and cordone speronato) on well exposed ground of a very varied nature (alberese, marl, clay, Pliocene conglomerates, alluvial materials…).
The production of grapes is 75 quintals per hectare, with a yield of 70% wine.
Vinification: the ripe grapes, picked early in October, are traditionally vinified by the red wine method, with 15-18 days maceration and frequent remontages; the fermentation, following the addition of selected yeasts, takes place at a controlled temperature (25°C).
Maturation: two years in French oak casks; the wine develops for at least three months in bottle before it is released for consumption. The result is a soft and round wine.
Wine: bright ruby red colour; intense bouquet of raspberries, violets and irises, with hints of spices and
toasted almonds; dry, clean and savoury, balanced flavour with an elegant, lingering aftertaste of liquorice and conserve of little red fruits of the forest.
Optimum keeping: more than 15 years in bottles stored horizontally in cool, dark conditions.
Food matches: roast and grilled red meats; game; lamb; mature Pecorino cheese
