Rosé wine from well-ripened Nero d'Avola grapes, obtained according to Sicilian peasant tradition: pinsta and mbutta, or crush and put in cask. Assembly from small sapling plots, old vines and young vines. Fermented on idigenic yeasts, aged in steel for 6 months with bâttonage depending on the moon, and for another 3 months in bottle. Not clarified. Regime of biodynamic agriculture. Average production of 6000 bottles.
