Bouquet
Intense and complex. Notes of ripe forest fruits (black cherry, blackberry), tobacco, cocoa, sweet spices, and balsamic hints. A refined and persistent bouquet.
Taste
Structured, elegant, with silky but present tannins. Long persistence, fresh and mineral, great balance and depth. Savory and harmonious finish.

Pairings
Ideal with roasted or braised red meats, game, aged cheeses, truffle-based dishes, and elaborate first courses.
Refinement
12-18 months in first and second pass French oak barriques, then 12-24 months in bottle for further evolution and complexity.
Vinification
Maceration on the skins for about 3-4 weeks. Fermentation in stainless steel tanks at controlled temperature, followed by malolactic.
18-20°C. Decant for at least one hour before serving to oxygenate.
