BIOLOGICAL
GRAPES:
TREBBIANO (85%) and PECORINO (15%) of ancient selections from their own vineyards
cultivated according to the principles of organic farming.
The vineyards are located near the territory of Pietranico, a small village in the province of Pescara, where they come from
ancient times there was widespread use of rock-stone basins for crushing and winemaking.
HARVEST:
The harvest takes place in the second and third week of September when the grapes reach full
biological and technological maturation evaluated by measuring the sugar content, pH and
total acidity. The grapes are harvested separately respecting their integrity and the
intrinsic organoleptic characteristics.
WINE:
Vinification takes place in accordance with tradition. The Trebbiano grapes, after de-stemming and
crushing, they were placed in stone tanks of various capacities and geometric shape, where the must was
in contact with the skins for about 12 hours. Then the must was separated from the skins,
subjected to soft pressing. All the must obtained was fermented in the same tanks of
Stone. Fermentation was carried out at a controlled temperature of about 20-22 ° C.
The Pecorino, after de-stemming and crushing, was fermented in contact with the skins at one
controlled temperature of about 15 ° C to facilitate the extraction of the aromas contained on the skins.
After the alcoholic fermentation, the wines are decanted into steel containers and left in contact
with fine lees for 60 days. During this period repeated batonnage is performed and, subsequently,
only when the malo-lactic fermentation is completed, repeated decantations are carried out until the
natural stability and clarity.
All the cellar and bottling operations are carried out with the utmost attention
care to respect the natural processes of evolution and maturation.
At all stages of winemaking and bottling, to ensure and protect the genuineness and healthiness
of the product, the rules laid down in the specifications for the production of organic wines are respected.
ORGANOLEPTIC CHARACTERISTICS
COLOR: intense straw yellow
BOUQUET: ample and intense, pleasantly spicy with strong minerality.
TASTE: balanced, sapid and mineral, soft, full-bodied and with great persistence.
