TREBBIANO (85%) and MALVASIA (15%) of ancient selections
coming from an old vineyards cultivated in the territory of the municipality of
Nocciano, according to the principles of organic agriculture.
HARVEST:
The harvest takes place at the end of September (late harvest) in
relation to the complete biological ripening of the grapes evaluated
by measuring the sugar content, pH and acidity
total.
The grapes are harvested manually respecting their own
integrity and of the organoleptic characteristics that will be expressed in the
future wine.
WINE:
The vinification takes place respecting the tradition applying the
modern principles of organic winemaking in white. After
selection of the best grapes, de-stemming and a short one
pellicular maceration, ie the contact of the skins with the must
a T ° of 15-18 ° C for 8-10 hours. This favors fractional extraction
of the noble aromatic components of the skins that will determine the
personality of the future wine. Then one is executed
soft pressing and the must is chilled to a T of 8-
10 ° C and decanted for 10-12 hours. The clear must is obtained
fermented in French oak barrels at a temperature of 20-23 ° C. TO
fine alcoholic fermentation is favored by malo-lactic fermentation
by inoculation of malolactic bacteria. The wine remains to refine
in barriques on fine lees for a period of 12 months until
moment of bottling, during this period they are executed
periodic "batonage", ie the mixing of the fine lees, which
allows a homogenization of the mass and the correct evolution
organoleptic of the wine itself. At the end of the refining period the
wine is decanted and bottled.
At all stages of winemaking to guarantee and protect genuineness e
the wholesomeness of the product is respected the rules foreseen by
disciplinary for the production of organic wines.
ORGANOLEPTIC CHARACTERISTICS:
COLOR: straw yellow
BOUQUET: fragrance of notable complexity, with notes of
ripe exotic fruit and toasted hints,
vanilla and spices
TASTE: fresh and savory taste, with a great personality,
harmonious and soft with excellent structure,
body and persistence
PAIRINGS: due to its organoleptic characteristics it is ideal
to accompany first courses and dishes based
of fish and lean cheeses, ideal for pleasant
meditations
SERVICE: serve at a T ° of about 10-12 ° C uncorking the
bottle at the time of consumption
