Colour
Intense amber, deep orange with copper reflections.
Bouquet
Complex: dried fruit, dehydrated apricot, honey, sweet spices, mineral and slightly oxidative notes.
Taste
Structured, delicate tannins, lively acidity, persistent, with hints of candied citrus, aromatic herbs, almond.
Alcohol content
13% Vol.
Type of glass
Large glass for structured white wine or Burgundy glass.
Pairings
White meats, aged cheeses, spicy dishes, oily fish, mushrooms. Excellent with fusion cuisine.
Refinement
In stainless steel tanks or oak barrels, followed by bottle aging. Often unfiltered.
Vinification
Prolonged skin contact of Xinomavro grapes, spontaneous fermentation with indigenous yeasts, at controlled temperature.
