Ingredients for 4 people:
- 350 g red rice “Principato di Lucedio”
- 3 artichokes
- Extra Virgin olive Oil 110 e lode “Oleificio Gulino”
- 1 clove of garlic
- Chopped parsley
- 1/2 glass of white wine
- 1/2 glass of water
- 80 g Parmigiano Reggiano
- salt and pepper
Preparation:
Clean the artichokes and cut them into fine pieces. In a saucepan, sauté a clove of garlic in a little olive oil, add the artichokes and the chopped parsley. Season with salt and pepper. Simmer for a few minutes and deglaze with white wine. Once the wine has evaporated, add 1/2 cup of water. Cover and simmer for 30 minutes on low heat.
In a pot bring water to a boil. Add salt and cook the rice for 45 minutes. Drain the rice and mix with the artichokes. Serve with lots of Parmigiano Reggiano cheese and a little olive oil.
