Ingredients for 4 people:
- 300 g red rice "Principato di Lucedio"
- 200 g red radicchio
- 2 fresh Salamini "Al Berlinghetto"
- Parmigiano Reggiano DOP
- Extra virgin olive oil from olives Moresca "Frantoio Cutrera"
Cook the red rice for 45 minutes with plenty of water.
Peel the sausage meat from the sausage skin and cut into pieces. Cook together with the shredded radicchio for about 15 minutes in a pan.
Drain the rice and add to the pan with the sausage and fry well for 2 minutes.
Serve with plenty of grated Parmesan.
