On the nose it is vigorous and fresh, with an absolutely unique expression of white fruit and citrus, a predominance of exotic fruit notes, melon, passion fruit on a more delicate background of apricot and quince and plum skin, nuances of lemongrass, flower of acacia, citrus zest, and a delicate mineral and saline appearance. Lightness is the norm on the palate, with abundant notes of somewhat sweet varietal white fruit (plum and ginger jam), winter lychees and lemon, candied grapefruit pulp, fresh balsamic and spicy nuances, lemon balm, verbena, green pepper, texture something succulent and unctuous, enormous structure and acid freshness, fine bitter and balsamic nuances (herbs) on the mid-palate and, altogether, enormous balance, in addition to a delicate and unique mineral character, Himalayan salt on the finish.
Pairing: It goes very well as an accompaniment to vegetables sautéed with fish, spaghetti with yogurt and mint pesto or pumpkin casserole.
