Branzi is one of the most ancient and typical cheeses of the Orobie Alps, and takes its name from the village in the Brembana Valley, in the province of Bergamo, where the production started.
It is produced in the same area as the Formai de Mut. It is a quality cheese, obtained from milk produced in the mountainous valleys in the area throughout the whole year.
For over fifty years the milk from the Brembana Valley and surrounding area cowsheds, with its typical features due to the quality of the forage and pastures, is collected daily and sent to the Latteria Sociale Casearia di Branzi, where it is processed after passing a series of meticulous controls and inspections.
The Branzi F TB is a cheese produced from semi-cooked whole cow's milk. The forms weigh on average from 10 to 12 kg. The maturation period lasts from 2 to 6/7 months. It has a sweet delicate taste; as it matures it acquires a more intense slightly spicy flavour.
