Unique panettone with candied fruit and dark chocolate chips - a true delicacy!
The Flamigni bakery produce their panettone in Rodello d'Alba in the Langhe (Piedmont). This region is famous for its wines and gastronomic delights. The fine art of baking begins with the selection of the best ingredients.
The first ingredient that gives the Flamigni panettone its unique taste is the sourdough, which was set in the 30s of the last century by the family and ever since was kept alive. But the sourdough is not only very tasty but keeps the panettone fresh for a long time and makes it enjoyable and easy to digest.
The used flour has a high protein content and thus provides a firm and elastic dough - perfect for a slow and natural raising.
The butter is made in the centrifuge and has a very high melting point of 33 ° C.
Tip: The panettone should be enjoyed lukewarm, so that the flavors can fully develop.
Only the yolks of the eggs are used.
The candied fruits come from Calabria:
- Orange peel of Navel oranges with thick peel of Sibari
- Citron from Diamante
These candied fruits are not treated with sulfur trioxide, but are soaked for 12 days in sugar water.
The raisins come from Turkey or from Australia, because of their long tradition in making raisins.
Our unusual variations include the addition of hazelnuts of the variety Tonda Gentile from the Langhe, the finest dark chocolate and many other varieties of candied fruit.
If vanilla is used, it comes from the Mananara Riserve in Madagascar (Slow Food ®).
