The grapes are hand-picked bunch by bunch
are personally selected by the winemaker and
stored in trays for 0 to 40 days (according to
time of harvest) in a natural environment,
without the use of ventilation machines
forced or for dehumidification.
Vinification and ageing: pressed all together without destemming, the grapes ferment in a concrete tank with indigenous yeast for approximately 30 days. This is followed by punching down, delestages and
especially the visual, olfactory and auditory control from
part of man. We then proceed to racking and processing
decantation for approximately 10 days. A double follows
refinement process for a total of 30 months
using new 225 French oak barriques
liters (20%), without any decanting. The wine comes
bottled without clarification and undergoes a
further refinement in bottle for at least 2 years.
Harlequin is only produced in important years.
Ideal pairing: it expresses itself best with important dishes and delicate dishes of white and red meats with robust and spicy sauces. Ideal with tasty, mature cheeses and game. Excellent at the end of a meal and as a meditation companion.

Visual analysis: brilliant ruby red color with garnet reflections as it ages, of good intensity. Dense when rotated with clearly evident glycerines.
Olfactory analysis: mix of fruit, flowers and minerals alternating with
sensation of well-defined volume and detail.
Taste analysis: sensation of enveloping richness and
complexity, fruit, spices and higher alcohols alternate with flavors of
fruit and undergrowth jam, then tobacco, cinnamon, nutmeg, cloves combined with minerality enhance the
depth of the puzzle. It closes with persistence and persuasive sweetness. It stands out from its younger brother Kairos for its greater definition of detail.
