BARDOLINO CHIARETTO DOC
To the observant eye, the first autumn mists that appear at harvest time and creep across the slopes falling away to Bardolino, an expanse of cotton wool that envelopes Lake Garda and fades away into the mountains on the opposite bank, gives the impression of endless, timeless space that feels almost like infinity.
This is the traditional “in rosa” (rosé) version of Bardolino, a name of German origin (probably from the patronymic “bardilio”), which, according to a legend, derives from Bardali, daughter of King Auleto and grand-daughter of Manto, founder of Mantua, mentioned in works by
Virgil and by Dante. The production of this wine started in 1993.
The grapes: 65% Corvina, 30% Rondinella, 5% Molinara.
The vineyard: selected parcels belonging to the property in the most acclaimed communes of the DOC zone (Bardolino and Cavaion) at altitudes varying from 100 to 150 metres, in the southeastern part of Lake Garda; the soil is stony, of morainic origin and of average texture, with a hard structure and a yield of grapes of 120 quintals per hectare.
The vinification: the grapes picked in the middle of September are vinified by the rosé wine method, with a short contact between the skins and the must, to achieve the right depth of colour; the alcoholic fermentation takes place very slowly at a controlled temperature and with selected yeasts. A small part of the wine undergoes a malolactic fermentation. The new wine develops in
steel, in the cold and always well protected from the processes of oxidation.
The wine: deep pink colour with vivid red tints; intense, elegant, fragrant bouquet of ripe grapes with delicate hints of wild cherries and blackcurrants; balanced, very savoury, fresh and fruity taste.
Analytical details: 11,8% alcohol; 5.2 g/l total acidity; 3.2 pH; 5.20 g/l residual sugar; 19 g/l dry extract.
Optimum keeping: 1-2 years in bottles stored horizontally in cool, dark conditions.
Food matches: Italian hors d’oeuvres, first courses, savoury dishes based on fish (soups, broths, stews) and white meats.
Serving temperature: 12-14°C.
