BARDOLINO CLASSICO DOC
Against the magnificent backdrop of Lake Garda, surrounded by olive groves and vineyards, sits the old farmhouse of Cà Bordenis from which this Bardolino Classico takes its name.
The name, of German origin (probably from the patronymic “bardilio”), according to a legend derives from Bardali, daughter of King Auleto and granddaughter of Manto, founder of Mantua, mentioned by Virgil and by Dante. Certainly in the neighbourhood of Bardolino, on the Veronese shore of Lake Garda, viticulture is very ancient, as proved by the grape pips discovered among the piledwellings from Peschiera to Lazise, dating back to
the Bronze Age. Bardolino Classico Ca’ Bordenis takes its name from an old farmhouse in the commune of Bardolino, surrounded since antiquity by vines, olive trees and cypresses. The production of this wine started in 1975.
The grapes: 65% Corvina, 35% Rondinella
The vineyard: our Cà Bordenis vineyard is a 5.09 hectare cru located at Calmasino di Bardolino.
It is planted using the Guyot system and faces Lake Garda with a south-east exposure at an altitude of 130; the land, eroded by the Wurnian glaciation, quite poor but rich in calcium with a hard stony skeleton, permits a yield of only 8000-10000 kilos of grapes per hectare. Many consider this vineyard to be an example of the most correct agronomic management of the classic Bardolino area and it is used by the local bodies as the best example for monitoring the pedoclimatic conditions and the ripeness of the grapes.
The vinification: the perfectly healthy and ripe grapes, picked at the end of September, after crushing stay for a few days in tank at a low temperature. After this cold prefermentation maceration, the raising of the temperature starts a slow fermentation of 6-8 days, with different temperature controls depending on the various structural and aromatic components and to enhance the qualities of the grapes and of the vineyard of origin.
The wine: deep, ruby red colour; fresh and fragrant bouquet, with strong hints of raspberry and wild cherry, spices and flowers; fruity and particularly savoury flavour, with good body and excellent length.
Analytical details: 12.2% alcohol; 5.1 g/l total acidity; 3.2 pH; 4.6 g/l sugar; 22 g/l dry extract.
Optimum keeping: 2 years in bottles stored horizontally in cool, dark conditions.
Food matches: cured pork meats, savoury first courses, poultry and white meats.
Serving temperature: 14-16°C
