VINIFICATION AND AGEING
Harvest: The Brunello di Montalcino Greppone Mazzi is produced with the top selection of grapes in the vineyards as well as on the selection tables in the cellar. The handmade picking, started on mid October, ended at the end of the same month, with several passages in the vineyards in order to pick the bunches at the ideal ripening.
Yield of grapes per hectare: 6 tons.
Fermentation: The alcohol fermentation, aided by racking and punching down, took place in thermo-controlled stainless-steel vats at a temperature of 28°C for 14 days. It was followed by a further maceration on the skins for another 10 days.
Ageing: After completing the malo-lactic fermentation the wine was aged in 30/60 hl. oak casks for 36 months. After a 6 months rest in stainless-steel vats, the wine was bottled and further refined in the bottle for at least 12 months.
Alcohol content: 14% vol.
SENSORY PROPERTIES
Colour: Ruby red with garnet hues.
Aroma: the first impression is very intense, with notes of ripe plums, cassis and maraschino cherry. Then it shows neat hints of incense, followed by cocoa, sweet tobacco and penetrating spicy notes of black pepper. All these flavours form a very complex and elegant bouquet, composed by extremely refined and neat sensations.
Tasting profile: at the palate it is full-bodied, with marvellous tannins that are steady and pronounced but at the same time elegant and smooth. Very well balanced, the aftertaste is outstandingly long, characterized by flavours of red fruit with elegant hints of chocolate and still showing sweet tobacco.
