In 1988 the first bottle of Roccato was born, a wine that, imagined and wanted by Italo and Sergio made from Sangiovese and Cabernet Sauvignon grapes in equal parts, represents the essence of the journey made by the company itself.
Today, starting from the 2015 harvest, it has undergone a further evolution: it has become a 100% Cabernet Sauvignon with grapes from a single "Poggio alle Pecchie" vineyard planted in 1996.
A wine born in the Chianti Classico area and which, although it cannot be part of it, seems to be chianteggi in its expressions.
Enveloping and velvety wine with rich aromas of blackberries, plums and licorice, it has a good mineral component and a tannic structure capable of supporting it for many years of aging.

Cabernet Sauvignon 100% (from the 2015 vintage)
Production technique
After a careful selection of the grapes, the vinification follows
with the most advanced cellar techniques, to finish with the
maturation in French oak barriques for a period
9 to 14 months. The wine ages for another three months in barrels of
35 hl followed by at least another year in the bottle.
Organoleptic characteristics
Color: very intense ruby red tending to garnet with
aging.
Bouquet: full and persistent, with hints of red fruits and
spices ranging from cocoa, vanilla to coffee.
Taste: warm and well balanced, with a dense network of tannins
which well support and sustain the long persistence
aromatic.
Manufacturer's recommendations
Long aging wine, it goes well with dishes
important of red meats and game, as well as cheeses
seasoned.
Serve at a temperature of 16/18 ° C.
Alcohol content: 13.5% vol.
