VALPOLICELLA SUPERIORE RIPASSO DOC "MORANDINA" 2017 - PRÀ: WHY WE LIKE IT
The wine is produced on the Valpolicella estate in Mezzane, where all the vineyards are conducted with organic farming. The vineyards are at an altitude of about 450 meters with south-east exposure. The planting density is over 7,000 plants per hectare and the yields are low, about 40 hl per hectare. It is a wine that perfectly represents the typicality and tradition of the Valpolicella area. After crushing and destemming, maceration and fermentation are carried out for 15 days in vertical vats. The delestage is followed by malolactic fermentation in 20-hectolitre oak barrels. The wine is then passed over the Amarone pomace for about 10 days, so that it can enrich the structure and aromatic bouquet. This is followed by a period of 18 months of maturation, partly in barrique and partly in Slavonian oak barrels. Finally, bottle aging for at least 6 months.
