Buttafuoco from Oltrepò Pavese DOC
Production area: Solinga valley, Canneto Pavese.
Soil: sandy-pebbly.
Vineyard: steeply sloping, facing south-west.
Grapes: croatina, barbera and ughetta di Solinga in varying percentages depending on the vintage.
Vinification: wine produced only in favorable years. The grapes are harvested by hand in boxes with careful selection of only perfectly ripe bunches. After destemming and pressing, the must remains in contact with the skins for a minimum of 20 days. After racking, the wine is aged in wooden barrels of various sizes for at least 12 months. After bottling, the bottles rest horizontally in the dark for at least 6 months before being put on the market.
Tasting notes: it shows a very deep ruby red color, almost impenetrable. The aromas range from dried flowers to black berried berries, with hints of dried plum, tobacco, cocoa, spices and the inevitable balsamic note typical of the Solinga Valley. In the mouth it has marked tannins of fine grain and a firm, robust structure. It is full and full, intense, fleshy and long. It improves with aging, which softens its tannins and rounds off the youthful edges. It reaches its peak after at least 12 years.
Pairings: ideal with second courses based on game and in general with meats cooked for a long time in wine, for example wild boar stew or donkey stew. Not afraid of medium-aged cheeses.
