n 1860, Fumane farmers built Le Salette: the homonym
sanctuary that became the symbol of our village and its
historical agricultural identity. It was built as a votive
with the hope of receiving a divine grace to eradicate
phylloxera, the deadly insect ravaging European
vineyards.
For four generations Franco Scamperle’s family
dedicated itself to cultivating the best vineyards in
Valpolicella Classica, with over 20 hectares under
current cultivation.
Le Salette uses only native grape varieties, to promote
Valpolicella’s historical wine-making knowledge, includ
-
ing natural drying process and ripasso, the double fer
-
mentation technique.
Le Salette is focused on sustainable agriculture – our
local experts harvest grapes exclusively by hand; tignola,
the dangerous butterfly, is enticed with sexual traps;
the weeds are removed mechanically, avoiding any use
of herbicides; and our soil is enriched only with organic
fertilizers.
Grape varieties 60% Corvina and Corvinone;
40% Rondinella, Croatina and Oseleta
Vineyards The 3 best “crus” in Valpolicella Classica, with 20 years
and older vines.
Wine making Expert-only selection of grapes during manual harvest,
followed by natural drying process for approximately 6 months in wooden
cases. Only produced in the best vintages.
Vine training Pergola
Wine aging 12 months in barriques, 18 months in terracotta am- phoras and 6 months in bottle. Could be enjoyed for over 20 years.
Wine pairing Dry pastries, almond, hazelnut cake, cookies, chocolate,
sbrisolona cake, or ideal wine for meditation.
Wine serving temperature 16°C/ 60°F. Best to open one hour
