In terms of worldwide production of the Pinot Nero grape, the Oltrepò Pavese comes third, after Champagne and Burgundy. La Versa employs this high-quality grape variety in the production of not only classic-method sparkling wines, but also of those made by second fermentation in pressure tanks, a process commonly called the Charmat method, but which is more accurately referred to as the Martinotti method, after its inventor, Francesco Martinotti, director of the Regia Stazione Enologica in Asti. Pinot Nero Brut La Versa is made exclusively with the precious grapes after which it is named, which are harvested in La Versa’s own vineyards.
GRAPES: Pinot Nero.
VINEYARDS Vineyards owned by La Versa growers. The vines are vertically trellised on the upper slopes of the Valle Versa, on soil that was originally marine sediment and is composed of very fine clay.
VINIFICATION Fermentation is carried out without the skins (‘in bianco’), with soft-pressing and controlled fermentation. Refermentation takes place in large containers, with exclusive La Versa yeast strains.
CHARACTERISTICS Lively white mousse; subtle, tight, persistent perlage; greenish straw-yellow colour; assertive, aromatic bouquet, reminiscent of peach and green almonds; dry, fresh and balanced flavour with a persistent fruity finish.
ACCOMPANIMENT An excellent aperitif, it is works very well with antipasti and fish dishes.
