Colour
Intense garnet red with orange reflections. Deep and brilliant, it evolves with age towards warmer, brick-red hues, typical of mature Nebbiolo.
Bouquet
Complex and elegant, notes of withered rose, violet, licorice, sweet spices, truffle, leather, and undergrowth. A broad and refined bouquet that gradually opens.
Taste
Austere, powerful but balanced, with fine, silky tannins. Long aromatic persistence, great structure and complexity promising a long life. Deep tertiary notes.
Alcohol content
14-14.5% vol. (varies by vintage).
Type of glass
Large Barolo glass, such as Grand Ballon or Riedel Sommeliers Barolo, to enhance its complex bouquet.
Pairings
Ideal with roasted red meats, game, braised dishes, aged hard cheeses, and truffle-based dishes.
Refinement
Long period in large Slavonian oak barrels (typically 30-36 months or more), followed by further bottle aging to consolidate its structure.
Vinification
Traditional fermentation with 20-30 days maceration on the skins in stainless steel or cement tanks at controlled temperature, to extract noble color and tannins.
