Rating
It is the Trentino sweet wine par excellence. At the origin of this small masterpiece produced in the Valle dei Laghi there is a native white grape, the Nosiola. Collected with care, so as not to crush the berries, the bunches of Nosiola are taken to the drying rooms where they rest until Holy Week. Here the racks are spread on the arele, once with a reed bottom, today with a metal mesh with more or less dense meshes, where the drying process begins, which reduces the weight by over a third. The main responsible for the phenomenon is botrytis cinerea, a "noble rot", which develops on the berries causing the dispersion of water and the concentration of sugars. The activity of Botrytis is favored by particular conditions of temperature and ventilation that find a perfect balance in the Valle dei Laghi: the Ora del Garda, the afternoon wind that blows from the lake towards the interior and the temperate microclimate, due to the configuration of the valley and the presence of many small bodies of water, offer an important contribution to the activity of mold. During Holy Week, which probably gives the name of the wine, the grapes thus dried are subjected to pressing. Very little must is obtained; the very slow fermentation stops naturally before all the sugar is transformed into alcohol. At this point a long aging process begins which also leads to a natural clarification. At least four years after the harvest - minimum period set by the disciplinary - bottling takes place: but most producers patiently wait much longer, at least seven - eight years, usually ten. Once bottled, Vino Santo can defy time: the lucky ones say that even after half a century, a well-preserved bottle always remains a gratifying experience. A wine therefore to be forgotten in the cellar to rediscover it pleasantly after many years.
