Cabernet Sauvignon Trentino DOC
The Conti d’Arco range includes a number of DOC wines from Trentino, selected from the most acclaimed zones of the region by the oenologists of Gruppo Italiano Vini who oversee every stage of the production process: from the vineyard to the bottle. The name comes from the noble family who owns the medieval castle which, from the rock of Arco, dominates the vineyards of the impressive valley between Lake Garda and the Brenta Dolomites.
Cabernet Sauvignon is a grape variety indigenous to the Gironde, in Bordeaux; it was imported into Italy in 1820, and has found a very favourable environment in Trentino. The Cabernet Sauvignon Trentino Conti d’Arco, matured in small oak casks, is an aristocratic red wine for roasts and game.
Grapes: 100% cabernet sauvignon.
Vineyard: selected parcels on the hills (200-300 metres altitude) around the Arco valley, on the northern shore of Lake Garda; the vines are trained by the pergola trentina system on wellexposed terrain, loose and well drained, of morainic-glacial origin; the yield of grapes is about 100 quintals per hectare.
Vinification: the ripe grapes, picked during the first half of October, are vinified by the red wine method with about a fortnight’s maceration; the fermentation takes place at a controlled temperature (28°C); the wine matures for a short time in small oak casks before it is bottled.
Wine: intense, ruby colour; very distinctive and complex bouquet, with touches of fruits of the forest preserve and hints of aromatic hay and of spices (vanilla, cloves); dry, full and warm, well structured flavour with a lingering clean and elegant aftertaste of raspberries and ripe blackberries.
Optimum keeping: 4-5 years in bottles stored horizontally in cool, dark conditions.
Food matches: roast red meats, game and mature cheeses.
Serving temperature: 18°C.
