The growing area comprises that recognized as optimal for the production
of typical Trentino quality wines; in order to obtain fine quality, Pinot Nero
should grow at altitudes superior to 400 m above sea level, because the
sun is mitigated by the wind and during the night the temperatures are
cooler.
WINEMAKING
The grapes are selected and harvested when they are ripe; they are then
de-stemmed and fermented; the must is kept in contact with the skins
through pumping over, in order to extract the substances present on the
skins. After the alcoholic fermentation, the wine undergoes the malolactic
fermentation, which imparts softness to the wine.
ANTALYTICAL DATA
Alcohol content: 13% vol.
Acidity: 5.45. g/l.
DESCRIPTION
Garnet red in the colour, characteristic for Pinot Noir, on the nose, hints of
violet and red fruits, with a dominance of strawberry and sometimes
marasca cherry.
On the palate it is soft, elegant, the fruit notes prevail when the wine is
young and are then replaced by a warm sensation due to the velvet
tannins with the ageing.
GOES WELL WITH
This wine fits very well with fine and delicate dishes, such as refined
poultry and white meats.
Serve at 18-19°C.
