DESCRIPTION OF CABERNET SAUVIGNON
The Cabernet Sauvignon from the Castelvecchio winery is a proud interpretation of an international vine that has been able to establish itself on the highest quality standards in the world and that here, in the Karst, manages to express all the power and fullness of its fruits. The predominantly calcareous and mineral-rich soil, assisted by a climate mitigated by the Bora, a typical wind of the area, allows these grapes to develop such strength and fullness as to produce a wine with splendid aging potential.
The Castelvecchio Cabernet Sauvignon grapes are the last to be processed compared to all the other vines on the estate. In fact, the harvest begins in mid-October, in order to take advantage of the full ripeness of the fruit of this extraordinary vine. Once in the cellar and fermentation has started, the wine is placed in steel tanks for about 4 months, in order to complete the malolactic fermentation. Subsequently, the Cabernet Sauvignon spends a year in French and Californian oak barrels and another 12 months in Slavonian oak tonneau. The process is completed by a refinement that lasts from 4 to 6 months inside the bottle.
Cabernet Sauvignon Castelvecchio is presented in the glass with ruddy vigor and brown nuances, as if to anticipate its great aromatic depth. The first breath is pampered by the spicy notes of cinnamon and vanilla followed by the sweetness and elegance of cherry in alcohol and raspberry. The mineral note closes the aromatic mosaic, a real signature of the Karst. When brought to the mouth, this Cabernet Sauvignon opens sincerely, expressing all its warmth and softness. The pleasantly thick structure almost invites chewing which betrays the great persistence of this wine. Full and with karstic vigor, this interpretation of Cabernet Sauvignon is an excellent travel companion if enjoyed during a barbecue with friends or if tasted alone while waiting for the first winds of autumn.
