The apples are mixed, crushed and pressed. The apple juice is directly fermented to give cider for distilling. The double distillation is carried out 6 months after the fermentation has taken place. The first distillation gives the "little water" at 30% by volume and it is the second distillation, that of the "little water" that gives Calvados.

Ageing: Since 1972, in oak barrels and in 400-litre toasted oak barrels. Unfiltered and uncold stabilized, it was treated in such a way as to maximize its concentration and complexity. Bottled to order.

Tasting Notes: Very deep mahogany colour. Transparent and bright. Smooth and non-aggressive. Aromas of wood and spices dominate. It ends with fruity notes. The aromas of calvados that remain on the walls of the empty glass reveal a lot. Very intense crystallized aromas, woody and spicy. Beautiful balance between bitterness and freshness. The finish is supported by aromas of tobacco.
