Ingredients for 4 people:
- 10 shrimp
- 10 Slices pancetta "Al Berlin Ghetto"
- 250 g red lentils "Agrirape"
- 1/2 onion
- Extra virgin olive oil Erbesso "Oleificio Gulino"
- Fine sea salt "Oro di Sicilia"
Chop the onion finely and place in a saucepan with 2 tablespoons olive oil. Sauté for a minute. Then add the lentils (no soaking needed) and add 2 glasses of water. Add salt, cover and simmer for an hour on low heat.
Clean the shrimp and wrap each shrimp with a slice of pancetta. Fry in a pan with a little olive oil for 4/5 minutes.
Serve the lentils on plates and garnish with the shrimp. Season with a little olive oil.
