Ingredients for 8 people:
- 300 g ladyfingers Savoiardi morbidi "Arcodolce"
- 250 ml of coffee "Oriental Caffè"
- 3 eggs
- 6 tablespoons sugar
- 500 g ricotta Fiordilatte Campana "Sapori del Sud" (or 500 g mascarpone)
- Bitter cocoa
- 1 pinch of salt
Separate the yolk from the egg white and beat the egg whites and a pinch of salt until you get a stiff foam. Beat the egg yolks with the sugar until fluffy, until you get a light and airy cream.
Press the ricotta through a sieve and mix with the cream from the egg yolk. Mix with the beaten egg whites. Put the cream for 30 minutes in the refrigerator.
Prepare 250 ml Espresso and let cool in a bowl (you can also take decaffeinated coffee). Cover the bottom of a baking dish with the ricotta cream. Dip the ladyfingers (Savoiardi) in the coffee and lay a layer of biscuit on the cream. Cover with ricotta cream and repeat the process. Sprinkle the last layer of cream with cocoa powder.
