To accompany our pastas, we have made a careful selection of organic artisanal sauces and pestos that perfectly complement the culinary experience. The important gastronomic culture of this place provided us with the guidance for the development of our most genuine and popular line. Processing buckwheat and turning it into pasta has allowed us to bring the intense and unique flavour of yesteryear to the present day. Our goal? To share with the world the flavours of Valtellina that leave no one indifferent through the uniqueness of our pasta. In the heart of the Italian Alps we have, as indisputable ingredients, the purity of the water and the most suitable environment for our type of production. In this uncontaminated place, more than 1,200 metres from the natural springs Duse and Moiane, flow the water we use to knead and shape all our pasta. Moreover, the excellence of the raw materials and the careful production process lead us to obtain a high quality product. Still extruded through bronze and in a completely manual process, the pasta is rolled out on wooden frames where it is left to slowly dry at a low temperature. The craftsmanship is present in everything we do and a clear testimony to this is the cutting of the spaghetti, which is still done by hand.
