Bright straw yellow with golden reflections.
Bouquet
Intense, complex; notes of citrus, apple, white flowers, toasted hazelnut, butter, and minerals.
Taste
Rich, structured, creamy yet fresh. Balanced with ripe fruit, minerality, and a long, slightly buttery finish.
Alcohol content
13.5% - 14% vol
Type of glass
Large white wine glass or Burgundy glass.
Pairings
Baked noble fish, crustaceans, poultry in creamy sauce, medium-aged cheeses (Comté, Gruyère).
Refinement
Typically in oak barrels (barriques) for 12-18 months, with some new wood. Followed by bottle aging.
Vinification
Manual harvest, gentle pressing, alcoholic fermentation in barriques (often indigenous yeasts), malolactic fermentation, aging on lees with 'bâtonnage'.
