Tasting notes: Light straw yellow color with golden reflections. At first it smells faintly of pome fruit. This changes if you leave some air in the jar. It then opens up and reveals aromas of yellow stone fruit, aromatic pome fruit, net melon and something exotic. On the palate, the acidity, which creates a drinkable spirit, is joined by a calcareous minerality and some salinity.

Pairing: Excellent with French cuisine, from terrines to fish and shellfish.
