Hi, My family is from Polizzi Generosa in Sicily and we make a pastry using UNSALTED SHEEPS MILK cheese called TUMA. I have purchased Tuma at home and New York, but it is more like provolone. The cheese used in the pastry is a dry cheese, almost like a ricotta, but drier. Are you familiar with this cheese?
