Taste
Warm, soft, velvety, with balanced tannins and a long, persistent finish.

Large glass, Bordeaux type or balloon glass.
Pairings
Roasted or grilled red meats, game, aged cheeses, rich pasta dishes.
Refinement
In French and American oak barriques for about 9-12 months, then in bottle.

Maceration of destemmed grapes at controlled temperature, alcoholic fermentation, then soft pressing.
